Turkey Mixture

  • 3/4 pound lean ground turkey
  • 4 garlic cloves, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/4 cup canned crushed tomatoes

Topping

  • 1/4 cup grated pepper Jack cheese


Instructions

  1. Prepare Sweet Potatoes: Pierce the sweet potatoes multiple times with a fork to allow steam to escape. Microwave on high for 8 to 10 minutes until they are soft and tender. Remove and let them cool enough to handle safely.
  2. Mash Sweet Potato Flesh: Cut the cooled sweet potatoes in half lengthwise. Carefully scoop out the flesh into a bowl. Mash the sweet potato flesh with olive oil, half the ground cumin, half the salt, and half the pepper until smooth and well combined.
  3. Cook Turkey Mixture: Heat a skillet over medium heat. Add the lean ground turkey and cook until browned, breaking it up as it cooks. Then add minced garlic, chili powder, dried oregano, paprika, remaining cumin, salt, pepper, and crushed tomatoes. Stir and cook the mixture for an additional minute to blend the flavors.
  4. Assemble and Broil: Spoon the cooked turkey mixture into the hollowed-out sweet potato skins. Top each filled potato half with shredded pepper jack cheese. Place them under the broiler for about 30 seconds, or until the cheese is melted and bubbly. Serve warm.
