Instructions
- Prepare the chicken: Pound the chicken breasts to an even thickness to ensure uniform cooking. Season both sides generously with salt and pepper.
- Coat the chicken: Dredge each chicken breast first in all-purpose flour, shaking off any excess. Then dip into the beaten eggs, and finally coat thoroughly with Panko breadcrumbs to create a crispy crust.
- Fry the chicken: Heat olive oil in a skillet over medium heat. Fry the breaded chicken breasts for about 3-4 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Make the garlic butter sauce: In the same skillet, melt the unsalted butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, taking care not to burn the garlic.
- Add parsley and season: Stir in the fresh chopped parsley, then season the garlic butter sauce with salt and pepper to taste.
- Combine and serve: Return the chicken to the skillet briefly to coat with the garlic butter sauce or alternatively pour the sauce over the plated chicken. Serve immediately with your choice of sides.
