Description

Keto Crispy Reuben Roll-Ups are a delicious low-carb appetizer featuring melted Swiss cheese baked into crispy circles, filled with savory corned beef and tangy sauerkraut, then rolled and crisped to perfection. Served with Russian or Thousand Island dressing, these roll-ups deliver classic Reuben flavors in a convenient, keto-friendly bite.

Ingredients

Scale

Cheese Circles

  • 1 ½ cups shredded Swiss cheese

Filling

  • 6 oz sliced corned beef
  • ½ cup sauerkraut, well-drained

Serving

  • ¼ cup Russian or Thousand Island dressing (for serving)
  • 1 tbsp chopped parsley (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and simplify cleanup.
  2. Form Cheese Circles: Place about 1/3 cup shredded Swiss cheese onto the parchment paper in small piles and gently spread each into a 5–6 inch circle, which will form the base for the roll-ups.
  3. Bake Cheese Circles: Bake the cheese circles for 5–7 minutes until they bubble and develop a golden edge, creating a crispy cheese shell suitable for rolling.
  4. Rest Cheese Circles: Remove the cheese circles carefully from the oven and let them rest for 30–45 seconds so they firm up slightly but remain pliable for rolling.
  5. Add Filling: Layer each cheesy circle with about 1/3 of the sliced corned beef and 1 tablespoon of well-drained sauerkraut evenly over the surface.
  6. Roll Up Circles: Using a spatula, gently roll each filled cheese circle into a tight log shape, enclosing the fillings completely.
  7. Seal and Crisp: Place the roll-ups back onto the baking sheet and return to the oven for 2–3 minutes to seal the edges and add extra crispness.
  8. Optional Broil for Extra Crunch: If you prefer an even crunchier texture, broil the roll-ups for an additional 30 seconds, watching carefully to prevent burning.
  9. Garnish and Serve: Sprinkle the finished roll-ups with chopped parsley if desired and serve alongside Russian or Thousand Island dressing for dipping.

Notes

  • Drain the sauerkraut very well to avoid soggy roll-ups.
  • Use Swiss cheese with good melting qualities for best texture.
  • Roll the cheese quickly after baking while still pliable to prevent breaking.
  • You can substitute Thousand Island dressing if Russian dressing isn’t available.
  • For meal prep, assemble but do not roll the cheese circles ahead of time to maintain crispiness.
