Description

Delicious and fluffy Greek Yogurt Pancakes made with wholesome ingredients like Greek yogurt, honey, and fresh blueberries. Quick to prepare and perfect for a healthy breakfast or brunch, these pancakes are light, protein-packed, and bursting with fruity flavor.

Ingredients

Scale

Main Ingredients

  • 6 oz Greek yogurt (Chobani Blueberry recommended)
  • 1 tablespoon honey
  • 1 large egg
  • 1 teaspoon baking soda
  • 1/2 cup all-purpose flour
  • 1/2 cup fresh blueberries (or any preferred fruit)

Instructions

  1. Mix Wet Ingredients: In a mixing bowl, combine the Greek yogurt, honey, and egg thoroughly until smooth.
  2. Add Dry Ingredients: Gradually mix in the all-purpose flour and baking soda into the yogurt mixture until fully incorporated, forming a thick batter.
  3. Prepare Cooking Surface: Preheat a large pan or griddle over medium heat to ensure even cooking.
  4. Shape Pancakes: Scoop about 1/4 cup of batter onto the hot pan. Because the batter is thick, use a spoon to smooth and shape the batter into an even circle.
  5. Add Fruit and Cook: Place fresh blueberries evenly on top of each pancake. Cook for approximately 2 minutes or until the underside is golden brown.
  6. Flip and Finish Cooking: Flip the pancakes carefully and cook for another 1-2 minutes until the second side is golden brown and the pancakes are cooked through.

Notes

  • The batter is thick, so use a spoon to spread and shape the pancakes properly on the griddle.
  • Feel free to substitute fresh blueberries with your favorite fruit such as strawberries, raspberries, or sliced bananas.
  • Serve immediately with additional honey, syrup, or fresh fruit toppings if desired.
  • Use a non-stick pan or lightly grease your cooking surface to prevent sticking.
