Scale
Main Ingredients
- 6 oz Greek yogurt (Chobani Blueberry recommended)
- 1 tablespoon honey
- 1 large egg
- 1 teaspoon baking soda
- 1/2 cup all-purpose flour
- 1/2 cup fresh blueberries (or any preferred fruit)
Instructions
- Mix Wet Ingredients: In a mixing bowl, combine the Greek yogurt, honey, and egg thoroughly until smooth.
- Add Dry Ingredients: Gradually mix in the all-purpose flour and baking soda into the yogurt mixture until fully incorporated, forming a thick batter.
- Prepare Cooking Surface: Preheat a large pan or griddle over medium heat to ensure even cooking.
- Shape Pancakes: Scoop about 1/4 cup of batter onto the hot pan. Because the batter is thick, use a spoon to smooth and shape the batter into an even circle.
- Add Fruit and Cook: Place fresh blueberries evenly on top of each pancake. Cook for approximately 2 minutes or until the underside is golden brown.
- Flip and Finish Cooking: Flip the pancakes carefully and cook for another 1-2 minutes until the second side is golden brown and the pancakes are cooked through.
Notes
- The batter is thick, so use a spoon to spread and shape the pancakes properly on the griddle.
- Feel free to substitute fresh blueberries with your favorite fruit such as strawberries, raspberries, or sliced bananas.
- Serve immediately with additional honey, syrup, or fresh fruit toppings if desired.
- Use a non-stick pan or lightly grease your cooking surface to prevent sticking.
