Ingredients
Scale
Beets
- 4 medium red beets
Salad Dressing and Topping
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Other Ingredients
- 1/2 cup crumbled feta cheese
- 2 tablespoons fresh dill, chopped
Instructions
- Preheat and Prepare Beets: Preheat your oven to 400°F (200°C). Scrub the beets clean under running water and trim the ends to prepare them for roasting.
- Roast Beets: Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast in the preheated oven for 45 to 60 minutes, or until the beets are fork-tender and easily pierced.
- Cool and Peel: Remove the roasted beets from the oven and allow them to cool slightly until they can be handled comfortably. Peel off the skins using your hands or a paper towel, then slice the beets into 1/4-inch rounds or wedges, depending on your preference.
- Dress Beets: Transfer the sliced beets into a large mixing bowl. Drizzle with olive oil and red wine vinegar, then season with salt and pepper to taste.
- Add Cheese and Dill: Gently fold in the crumbled feta cheese and the chopped fresh dill to the beet mixture, tossing lightly to evenly combine the ingredients without breaking up the beets or cheese.
- Serve or Chill: Serve the salad immediately to enjoy the fresh flavors or cover and chill it in the refrigerator for 30 minutes to allow the flavors to meld and deepen before serving.
Notes
- Roasting times can vary depending on the size of the beets; check tenderness by piercing with a fork.
- Chilling the salad enhances the flavor but can be served warm if preferred.
- Fresh dill adds a bright herbal note; if unavailable, fresh parsley or mint can be substituted.
- For an extra touch, sprinkle some toasted walnuts or pumpkin seeds before serving.
- Use a sharp knife to slice beets evenly for better presentation.
