Zucchini Chips
- 2 medium zucchini (medium-sized)
- 1 large egg (large)
- 1 Tbsp. milk (oat, cashew, or soy)
- ½ cup plain breadcrumbs (Italian seasoned)
- â…“ cup grated Parmesan cheese
- ½ – ¾ tsp. salt (to taste)
- ¼ tsp. black pepper
- Non-stick cooking spray
Instructions
- Slice the Zucchini: Cut the zucchini into ¼-inch thick slices, discarding the ends to create even chips that cook uniformly.
- Coat the Zucchini Slices: Prepare two shallow bowls: In the first, whisk together the egg and milk until fully combined. In the second, toss breadcrumbs, Parmesan cheese, salt, and black pepper until evenly mixed. Dip each zucchini slice into the egg wash, letting excess drip off, then firmly press into the breadcrumb mixture to coat it well. Repeat for all zucchini slices.
- Cook in the Air Fryer: Arrange half of the coated zucchini slices in a single layer in a 6-quart air fryer basket. Lightly spray with non-stick cooking spray to help achieve a crisp finish. Air fry at 400°F (200°C) for 8-10 minutes, flipping the slices halfway through for even cooking. Repeat with the remaining zucchini slices.
- Serve: Enjoy the crispy zucchini chips hot, accompanied by your choice of dips such as marinara sauce, ranch dressing, or special sauce.
